The Preparation
Step 1
Pressure cook soaked rajma with salt and turmeric for 5-6 whistles until soft.
Step 2
Heat mustard oil in a kadhai. Add cumin seeds and let them splutter. Add chopped onions and sauté until golden.
Step 3
Add ginger-garlic paste and cook for 2 minutes. Add turmeric, red chilli, and coriander powder. Stir for a minute.
Step 4
Add tomato puree and cook until oil separates. Add cooked rajma with its water. Simmer for 20 minutes until thick and creamy.
Step 5
For jeera rice: heat ghee, add cumin seeds and bay leaves. Add washed rice and cook with 3 cups water. Serve rajma over jeera rice with fresh coriander.
